Lemon Chia Seed Scones

2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons chia seeds
1 lemon, zested and juiced
1 stick unsalted butter, cold and chopped
1/2 cup milk
1 teaspoon lemon extract

Preheat oven to 375 degrees.

Sift flour, sugar, salt and baking powder into a bowl. Mix well. Add the lemon zest and chia seeds.

Work the butter into the flour mixture until the mixture looks like breadcrumbs.

Add the lemon juice, lemon extract and milk. Mix until a soft dough forms.

Form into 8 scones.

Bake 25 minutes.

Yields: 8 scones
