Orange Scones with Chocolate Chips and Chia Seeds

Get out of the winter blues with this flavorful combination. It is sure to bring a smile to your face.

2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons chia seeds (optional)
The juice and zest of one orange
1 stick unsalted butter, cold and chopped
1/2 cup chocolate chips
1 teaspoon vanilla extract
1/2 teaspoon orange extract
1/2 cup milk

Preheat the oven to 400 degrees.

In a mixer, add the flour, sugar, baking powder, salt, chia seeds and orange zest. Turn on low and mix until thoroughly incorporated.

Add the chopped butter, and mix until the mixture looks like breadcrumbs. Add the chocolate chips and combine on low.

Add the juice, both extracts and milk. Mix. The dough will be sticky. If it is too dry, add another couple tablespoons of milk.

You can make your scones with a cookie cutter, or form into a ball, flatten and cut into wedges, or use a scone pan.

Bake 25 minutes on the middle shelf.

Yields: 8 large scones or 16 small scones
