Irish Buttermilk Scones

  • 4 cups all-purpose flour, sifted
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 tablespoon sugar
  • 1/4 cup butter, room temperature
  • 1 1/4 cup buttermilk
  • 1 egg
  1. Preheat oven to 425 degrees.  Place the shelf in the middle.  Lightly spray a cookie sheet with oil.
  2. In a large bowl, add the flour, salt, baking soda and sugar.
  3. Mix the butter into the flour until the flour mixture resembles breadcrumbs.
  4. Gently add the buttermilk and egg, mixing to a soft dough.
  5. Roll out dough and make 18 small scones.
  6. Place on a baking sheet and bake 15 minutes until golden brown.
  7. Serve immediately with butter and jam.
